Cookie Dough Bars
Recipe type: snack, gluten-free
 
Ingredients
  • 1.5 cups raw cashews
  • 1 cup soft Medjool dates, pitted, about 13 tightly packed
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • 4 tablespoons vegan mini chocolate chips
  • optional add ins: dried cherries, raisons, shredded coconut
Instructions
  1. Add cashews to food processor and process into “flour”
  2. Add dates, vanilla, and salt. Process until a well combined dough forms
  3. Transfer mixture to a medium sized bowl and fold in the chocolate chips and additional add ins
  4. Spread mixture firmly and evenly into a lined baking dish (wet your hands to prevent sticking) or roll into balls!
  5. Freeze for at least 20 minutes, before slicing
  6. Store in air tight container in fridge
