  • 2 cloves of garlic - minced
  • ½ red onion - sliced
  • 5 Roma tomatoes - seed and diced
  • 2 celery stalks - diced
  • 1 zucchini - diced
  • ¼ Cup olive oil
  • 2 Cups tomato juice
  • dash of hot sauce
  • salt and pepper to taste
  • garnish with avocado & fresh cilantro
  1. In a large bowl combine the tomato juice and hot sauce
  2. For a chunky texture simply add the garlic, onion, oil and diced veggies to the bowl OR for a smoother consistency place the garlic, onion, olive oil and half of the diced vegetables into a food processor or blender, and process until smooth
  3. Carefully mix all the ingredients together in the large bowl with the tomato juice, add water to adjust consistency
  4. Allow to chill in fridge 2-3 hours before serving.
