Avocado Salad with Mango Dressing




  1. to make the dressing, blend the coconut water, 1 cup chopped mango, lime juice and zest, ginger, tamari, garlic, red onion, 2 tablespoons chopped cilantro, 2 tablespoons chopped mint and salt to taste
  2. to make the salad, place the kale and avocados in large bowl, toss with the olive oil, and lemon juice.
  3. when ready to serve, drizzle the dressing over the salad and garnish with almonds, mint and cilantro
