Southwest Black Bean and Sweet Potato Burger

Ingredients

  • 3 tablespoons flaxseed meal mixed with 9 tablespoons warm water; allow to set for 5 minutes to create a “flax egg”
  • 1 can black beans, drain and rinse
  • 1 cup peeled and grated sweet potato
  • 2 scallions, chopped
  • 1/2 cup white onion, chopped
  • 1/2 cup sun-dried tomatoes in oil, chopped
  • 3/4 cup raw sunflower seeds
  • 3/4 cup oat flour (can be gf)
  • 1/2 cup bread crumbs (can be gf)
  • 2 tablespoons tamari
  • .5 tablespoon garlic powder
  • 12 teaspoons chipotle powder
  • 2 teaspoons dried oregano
  • 2 teaspoons ground cumin
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper
  2. Mash the black beans in a large bowl and stir in all of the remaining ingredients. Taste and adjust seasonings as desired.
  3. Shape and pack the mixture into patties using slightly wet hands and place on lined baking sheet
  4. Bake for 15 minutes, flip and bake for 20 minutes more
  5. Serve in cabbage leaves or buns
  6. Leftovers can be frozen, just make sure they are cooled
