Almond Chai Breakfast Bites

Ingredients

- 1 cup raw almonds
- 1 cup raw sunflower seeds
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon salt
- 1 cup shredded coconut
- 1/2 cup raisons
- 1/4 cup almond butter
- 1/4 cup maple syrup
- 1/4 cup coconut oil
- 2 tablespoons ground flaxseed meal
Instructions
- To a food processor add the almonds, sunflower seeds, cinnamon, ginger, cardamom, and salt
- Process until nuts are coarsely chopped and transfer to large mixing bowl. Stir in the coconut and raisons and set aside.
- On the stovetop over low heat melt the almond butter, maple syrup and coconut oil
- Once melted remove from heat and whisk in the flaxseed meal. Pour over the dry ingredients and mix well.
- Use a ice cream scoop or wet hands to form mixture into bite size mounds
- Set in fridge for at least 30 minutes before serving
- Store in fridge
