Almond Chai Breakfast Bites

Ingredients

Scale
  • 1 cup raw almonds
  • 1 cup raw sunflower seeds
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon salt
  • 1 cup shredded coconut
  • 1/2 cup raisons
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 2 tablespoons ground flaxseed meal

Instructions

  1. To a food processor add the almonds, sunflower seeds, cinnamon, ginger, cardamom, and salt
  2. Process until nuts are coarsely chopped and transfer to large mixing bowl. Stir in the coconut and raisons and set aside.
  3. On the stovetop over low heat melt the almond butter, maple syrup and coconut oil
  4. Once melted remove from heat and whisk in the flaxseed meal. Pour over the dry ingredients and mix well.
  5. Use a ice cream scoop or wet hands to form mixture into bite size mounds
  6. Set in fridge for at least 30 minutes before serving
  7. Store in fridge
