Chickpea Croutons

  • 1 1/2 cups cooked chickpeas (if time permits, it is ideal to remove the skins)
  • 2 teaspoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt


  1. preheat oven to 400 and line a baking sheet with parchment paper
  2. toss all ingredients together in a bowl until chickpeas are evenly coated
  3. spread out in one layer onto lined baking sheet
  4. bake for 20 minutes, toss and bake for another 10 minutes
  5. remove from oven and allow to cool completely
  6. store in an airtight container at room temperature for a few days, if they get soft you can always rebake them!
