Ingredients
Scale
- 2 cloves of garlic – minced
- 1/2 red onion – sliced
- 5 Roma tomatoes – seed and diced
- 2 celery stalks – diced
- 1 zucchini – diced
- 1/4 Cup olive oil
- 2 Cups tomato juice
- dash of hot sauce
- salt and pepper to taste
- garnish with avocado & fresh cilantro
Instructions
- In a large bowl combine the tomato juice and hot sauce
- For a chunky texture simply add the garlic, onion, oil and diced veggies to the bowl OR for a smoother consistency place the garlic, onion, olive oil and half of the diced vegetables into a food processor or blender, and process until smooth
- Carefully mix all the ingredients together in the large bowl with the tomato juice, add water to adjust consistency
- Allow to chill in fridge 2-3 hours before serving.
