Kale and Quinoa Salad

Ingredients
Scale
- 6 cups torn kale leaves, stems removed
- 1/4 cup flax or olive oil
- 1/2 lemon, juiced
- 1 teaspoon salt
- 1 cup cooked quiona
- 2 tablespoons nutritional yeast
- 1 teaspoon garlic powder
- 1 avocado, skin and pit removed, chop into chunks
- optional: some sort of seeds i.e. hemp, pumpkin, sunflower
- chickpea croutons (recipe here)
Instructions
- place kale in a bowl
- add oil, lemon and salt – use your hands to massage the kale until it softens
- add the remaining ingredients and toss to combine
- serve immediately – store leftovers in the fridge for up to 2 days
