Kale and Quinoa Salad

Ingredients

Scale
  • 6 cups torn kale leaves, stems removed
  • 1/4 cup flax or olive oil
  • 1/2 lemon, juiced
  • 1 teaspoon salt
  • 1 cup cooked quiona
  • 2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 avocado, skin and pit removed, chop into chunks
  • optional: some sort of seeds i.e. hemp, pumpkin, sunflower
  • chickpea croutons (recipe here)

Instructions

  1. place kale in a bowl
  2. add oil, lemon and salt – use your hands to massage the kale until it softens
  3. add the remaining ingredients and toss to combine
  4. serve immediately – store leftovers in the fridge for up to 2 days
