Avocado Salad with Mango Dressing

- 1/2 cup coconut water
- 1 cup chopped mango
- 1 tablespoon lime juice
- 1 teaspoon lime zest
- 1 1/2 teaspoon minced ginger
- 1/2 teaspoon tamari
- 1 clove garlic
- 1 teaspoon diced red onion
- 2 tablespoon chopped cilantro
- 2 tablespoon chopped mint
- salt to taste
- 1 bunch kale, stems removed, washed and chopped
- 2 avocados, peeled, pitted and cubed
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- slivered raw almonds, more chopped mint and cilantro for garnish
Instructions
- to make the dressing, blend the coconut water, 1 cup chopped mango, lime juice and zest, ginger, tamari, garlic, red onion, 2 tablespoons chopped cilantro, 2 tablespoons chopped mint and salt to taste
- to make the salad, place the kale and avocados in large bowl, toss with the olive oil, and lemon juice.
- when ready to serve, drizzle the dressing over the salad and garnish with almonds, mint and cilantro
