I adore pizza and one of my favorite ways to make it at home is in a cast iron skillet. Placing the dough in a hot skillet creates a crispy bottom and the overall result is a rich and chewy pizza that is a nice change from your usual thin slice. Mediterranean Skillet Pizza

The addition of classic mediterranean ingredients plus spicy vegan pepperoni really take it over the edge. I hope you enjoy this one as much as I do! 🙂
Ingredients
1 pound of pizza dough, covered at room temperature for about 2 hours
olive oil
2 garlic, chopped
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes
salt and pepper
1/2 cup pitted Kalamata olives, chopped
1/2 cup oil packed sun-dried tomatoes, drained and chopped
1/2 cup marinated artichokes, drained and coarsely chopped
1 cup shredded mozzarella
1/2 cup sliced parmesan
8 pepperoni slices
2 red bell peppers, very thinly sliced
Instructions
Preheat oven to 450 and place cast iron skillet inside to heat up
On a lightly oiled surface, roll the dough into a circle, similar in size to the pan
Once the oven is preheat, carefully remove pan, spray with a bit of cooking spray and very carefully slide the dough into the hot pan. Carefully place back in oven and partake for 10 minutes.
Carefully remove pan, cover in all desired topping and bake for another 10 minutes
Remove from oven, slice and serve!
