Southwest Black Bean and Sweet Potato Burger

Ingredients

- 3 tablespoons flaxseed meal mixed with 9 tablespoons warm water; allow to set for 5 minutes to create a “flax egg”
- 1 can black beans, drain and rinse
- 1 cup peeled and grated sweet potato
- 2 scallions, chopped
- 1/2 cup white onion, chopped
- 1/2 cup sun-dried tomatoes in oil, chopped
- 3/4 cup raw sunflower seeds
- 3/4 cup oat flour (can be gf)
- 1/2 cup bread crumbs (can be gf)
- 2 tablespoons tamari
- .5 tablespoon garlic powder
- 1–2 teaspoons chipotle powder
- 2 teaspoons dried oregano
- 2 teaspoons ground cumin
- salt and pepper to taste
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper
- Mash the black beans in a large bowl and stir in all of the remaining ingredients. Taste and adjust seasonings as desired.
- Shape and pack the mixture into patties using slightly wet hands and place on lined baking sheet
- Bake for 15 minutes, flip and bake for 20 minutes more
- Serve in cabbage leaves or buns
- Leftovers can be frozen, just make sure they are cooled
